Egg bites are one of my favorite go to's. They can easily be made in advance, and make a great grab and go breakfast. I love how versatile it is. There are endless possibilities on what to mix in it. Red bell pepper, onion, jalapeño, shredded cheese, bacon, ham, and sausage to name a few great mix ins. My go to mix ins are: red bell pepper, onion, and shredded cheese. Spices can vary based on your taste buds. Classics I like to use are: salt, pepper, and garlic powder. Here is my go to recipe, I hope you enjoy! (:
Andrea's Classic Egg Bites
6 eggs
4 tablespoons of milk (can also use heavy cream)
1/4 cup each of chopped onion and red bell pepper (can do more or less its completely up to your preference )
1 cup of shredded cheese
pinch of salt
pepper to desired preference
1/4 teaspoon garlic powder (I personally really like garlic. This amount is always a good amount that isn't over powering)
Directions: Preheat oven to 375 degrees. Mix eggs, milk and seasonings together until the yolks are thoroughly mixed well. Add the red bell pepper and onion and gently stir in. Next add the shredded cheese and gently stir to incorporate all the mixture together. Pour egg mixture into lightly oiled muffin tin or silicone baking cups. Bake for 10 minutes, adding more time if the center is still not set.
